Mediterranean Pasta Bake
Living in Spain means access to the freshest ingredients, but whether you´re in Spain or anywhere else for that matter, simple Spanish cuisine is a breeze to cook at home. This typically Spanish dish uses inexpensive ingredients to make something fresh and tasty. Low in fat, and suited to a vegetarian diet too. Fresh, easy, and ready in 30 minutes or less.
LIST OF INGREDIENTS ...
- 200g dried pasta
- 50g mild cheese
- 1 courgette
- 1 green pepper
- 1 medium onion
- 1 tin chopped tomatoes
- 1 red pepper (mild or hot)
- 1 dozen stoned olives
- Salt and pepper to taste
- Celery leaves
- Oregano
- Olive oil
GET READY TO COOK ...
- Fill a pan with water and set on the hob to boil. Open the tin of tomatoes and
pour into a saucepan and place a frying pan on a medium heat. - Finely chop the onion, courgette, and green pepper. Lightly fry for 5 minutes and
add to the sauce, adding two teaspoons of oregano and salt and pepper. - Retire the frying pan and move the saucepan on to the hob, finely chop the tomato
and add to the sauce with a little olive oil. Slice the red pepper. - Add the dried pasta to the boiling water, pour in a little olive oil to prevent the
pasta from clumping, and pre-heat the grill on the oven to a high setting. - Grate the cheese and after 15 minutes, or once the pasta is cooked to taste, drain
the pasta and stir in the sauce covering all the pasta. - Pour the pasta and sauce into an oven proof dish, sprinkle the cheese over the
pasta and place under the grill for 10 minutes or until the cheese browns. - Add the olives, red pepper, and celery leaves and serve immediately.
